Japan’s traditional culture is often described as a seasonal culture, for so much revolves around the changing of the seasons, and the “sense” of season is highly valued. As the seasons change, so will the menu offerings, with a premium placed upon freshness and flavor to deliver the best of ingredients for the “shun” or, in English, now-in-season.
